My mum used to make Rock Cakes that tasted really nice. They were also hard and crunchey. Hers were the only rock cakes I have ever had that was like that. Jan makes cakes that look similar but are not hard. Any recipe's please.

That would be very nice George. Joan is a nice lady I don't think she will mind. Probably the others are sulking over something trivial.

Hi Jim,Rock cake recipe.

4oz butter or marg
8oz plain flour
2 teaspoons baking powder, pinch of salt
1/2 teaspoon mixed spice
4oz demerara sugar
4oz mixed dried fruit
1 egg beaten
Rub the fat into the, sifted flour, baking powder, salt and spices until the mixture resembles fine breadcrumbs.Stir in the sugar and fruit. Make well in the centre, pour in the egg,to give a stiff crumbly consistency,if too stiff a very little milk should get it right.Bind together loosely using a fork. Then using two forks shape the mixture together in rough heaps into your baking tins(sorry dont forget to grease the tins).Bake in oven Elec 200C-Gas mark 6 for 15 to 20 min.
This recipe works for us Jim,if they are not hard enough for you then give them a few more minutes cooking time.
I guess that Jan will have to prepare all of this and I am sure she will know what to do.
